A Pleasant Little Thanksgiving

Thanksgiving is a little more than a week away and it’s time to plan the menu. Below are four of APLK’s recipes that are perfect to serve your loved ones on this day of thanks. Happy cooking!

Savory Corn Bread Pudding with Leeks, Bacon and Sage

One of my favorite APLK recipes, Savory Corn Bread Pudding with Leeks, Bacon and Sage, can kill two birds with one stone: breakfast and a Thanksgiving side. Make this the evening before and pop in the oven Thanksgiving morning. You and your overnight guests will be able to nibble on this “side” while prepping for the upcoming Thanksgiving feast.

Caramelized Onion and Basil Quinoa Salad (without the chicken!)

This dish is excellent to serve alongside the heavy sides of Thanksgiving. While Caramelized Onion and Basil Quinoa Salad is light, it still provides a savory, gluten-free and dairy-free touch to any menu. Repurpose this salad the next day by adding leftover turkey and you will have a quick and easy lunch for the next few days.

Creamed Cabbage with Bacon

Rich, warm and satisfying– Creamed Cabbage with Bacon is the perfect holiday side. The benefit of this dish is that it only occupies one burner on the stovetop and requires very little attention while it cooks for an hour and a half.

Herb Roasted Potatoes with Red Wine Vinegar and Lemon Zest

If you’re looking to replace the obligatory mashed potato use Herb Roasted Potatoes with Red Wine Vinegar and Lemon Zest. They will add a nice change of texture to the traditional Thanksgiving plate and leftovers can be used for a turkey and potato hash the following morning.
