A Pleasant Little Leftover | Black Bean Puree

After being soaked, simmered and pureed, the black beans are ready to eat. Here are some ways to creatively enjoy black bean puree (click here for recipe) all week long:

Black Bean Puree with Spicy Garlic Shrimp

Pour the puree into a bowl, add the shrimp, top with cilantro and serve with tortilla chips.

Black Bean Soup

Add enough chicken stock to the puree to achieve a soup consistency. Serve in bowls topped with chopped seeded tomatoes, cilantro, sour cream and hot sauce.

Tacos with Beer Braised Pork Shoulder, Black Bean Puree, Avocado Crema and Sriracha Coleslaw

Smear a spoonful of black bean puree and avocado crema onto flour tortillas, add the pork and coleslaw, then top with a spritz of lime juice.

Place the beans onto a plate (or bowl), add avocado slices and a runny egg, and top with cilantro, hot sauce and crumbly cheese.
