Gamma Phi Beta Chocolate Chip Cookies

This is not my recipe but the recipe of Dolorus Housh, house cook at the Psi Chapter of Gamma Phi Beta Sorority at the University of Oklahoma. This woman fed thousands of young women for several years at the university. Her cookies, however, were the most beloved item she made. If you were not at the sorority house when she announced that “warm cookies” were in the kitchen, more than likely you did not get one. Several years later my best friend encouraged me to top these most perfect cookies with a touch of sea salt while the cookies were cooling. You should too. 16 years ago I put together a cook book for the University of Oklahoma with beloved campus recipes. She submitted this recipe and this is how it was written:

Ingredients

cream at least five minutes:

  • 1 1/2 cups butter flavored Crisco
  • 2 1/2 cups brown sugar
  • 4 tablespoons milk
  • 2 tablespoons vanilla extract
  • 2 eggs, blended one at a time

mix

  • 3 1/2 cups flour
  • 2 tsp salt
  • 1 1/2 tsp soda

Add to creamed mixture gradually. Stir in 3 cups of chocolate chips.

    Bake for 7 minutes at 350 degrees in a convection oven and 400 degrees in a regular oven.
