Cilantro Mint Cooler

Ingredients

  • 1 1/2 cups of cilantro, somewhat packed
  • 1 1/2 cups of mint, somewhat packed
  • 3 cups of ice cold water
  • 1/2 cup of lemon ginger simple syrup, chilled (see below for recipe link)
  • ice
  • 1 ounces of rum, optional
  • squeeze of lemon

Instructions

  • Place the cilantro, mint and water into a blender (or a food processor) and blend until the herbs are thoroughly pureed.
  • Strain the water from the herbs into a pitcher.
  • Add the syrup and stir well to combine.
  • Place ice into individual glasses, top with rum (if using), cilantro mint cooler and a squeeze of lemon. Stir and serve.
