Vanilla-Lime Fizzy

34 ounces sparkling water, chilled
3 1/2 ounces fresh lime juice (about 4 limes)
5 1/2 ounces vanilla simple syrup, chilled (see recipe below)
- In a pitcher add the sparkling water and top with lime juice and simple syrup. Stir well. Serve over ice or place in the fridge to chill.
Vanilla Simple Syrup
1 cup sugar
1 cup water
1/2 teaspoon vanilla extract
- Place all ingredients into a saucepan and heat over low until the sugar has dissolved, about 5 to 10 minutes. Remove from the stove and bring to room temperature. Pour into an airtight container and store in the fridge.
