Star Anise Chicken Noodle Soup
One of my closest friends once fed me a memorable bowl of homemade chicken noodle soup. The small noodles were handmade as was the stock. The defining element of this bowl of love was the star anise. It was beautiful and I want to pass on this same experience to you even if the delicate noodles in this soup are not homemade. I rarely add chicken to this soup. If you would like chicken about 1 to 1 1/2 cups of finely chopped rotisserie chicken should do the trick. Remember to reduce the amount of salt if you do not use homemade chicken stock. The addition of star anise is optional, however, I beg you to give it a whirl.
Ingredients
- 6 cups homemade chicken stock , see below for recipe
- 2 tablespoons unsalted butter
- 1 teaspoon kosher salt
- 2 cups thin German egg noodles
- 1 to 2 pods star anise
Instructions
- In a large pan add the chicken stock and bring to a boil. Add the butter and salt. Once the butter has melted add the noodles and star anise. Cook for 10 to 12 minutes or until desired doneness. Ladle into bowls, serve warm and salt to taste.
